Noah Cabernet/Merlot 2006

I
was attracted to the Noah Cabernet Merlot because of the price. It is only
$12.99 and barrel aged for 12 months. You don't see that too often, usually
wines in this price point don't see oak, or are artificially oaked with wood
staves.
The grapes for this wine were grown in the Judean Hills, a
developing wine region right outside of Jerusalem. The wine has a light ruby
color and on the nose you can detect cherries and vanilla. I was expecting this
to be a fruit bomb, instead I found that the fruit was milder and the oak was
more pronounced. It is extremely well balanced and full of flavor. Although the
wine is dry, the fruit and chocolate notes tend to soften it up and make the
Cabernet/Merlot very easy to drink. The aftertaste is long and impressive with
coffee, chocolate and mint notes. I can't believe this is only
$12.99!
I checked the reviews on myKerem and surprisingly it is getting poor reviews. I am not sure why, maybe this vintage is better then the previous ones. But overall I tend to like wines coming out of the Hevron Heights winery. If you are looking for a real treat try Isaac's Ram (

What to eat it with?
The oak imparts a strong
chocolate/coffee/charred flavor to the wine which makes it great for anything
grilled. Try it with grilled chicken, grilled strip steak, or even grilled
vegetables. If you are feeling really daring try it with dark
chocolate!
NOTE: This wine must be decanted. It is best to use a
decanter, or you can just pour it in your glass and wait about 20 minutes. The
difference is extreme and worth the wait.
