General Information
The vineyard at Dovev lies on steep hillsides in a mountainous section of Israel's border with Lebanon. The difficult terrain divides the vineyard into a number of small plots separated from one another by rocky outcroppings. The merlot is planted on rocky Dolamatic lime soils. Due to its high elevation, the Merlot of Dovev is among the last grapes to ripen, producing fruit of intense aroma and tannin. The fruit is hand-harvested. The wine is aged for 15 months in a mixture of French and American oak, yielding notes of chocolate, leather and tea to create a complex bouquet. The wine will improve with aging and is a delight with a wide range of dishes.

Deep and dark, ripe and luxurious, with generous black cherry, blackberry, plum, mocha and vanilla aromas and flavor on a soft, almost caressing background.

Excellent bottle! Deep, brooding, almost purple color, generous fruit, still strong tannins, this is a serios wine, nothing like the Merlot of "Sideways". Very good, should continue to cellar for quite awhile.
