What Is Your "Goto" Wine?

Everyone is always looking for that new wine to try. At KosherWine.com
we always get the same question "Whats new and exciting?" I'm wondering what
people are drinking when they aren't looking for that new wine. Is
there one wine you always keep stocked for everyday drinking? Is it a
few different wines? Or are you continuously in the pursuit of new
wines? It would be interesting to hear from both wine professionals and wine consumers on this one.

Someone just recently pointed out to me that it is my personality to get bored of things quickly. I never realized this about myself until recently, and when I posted this forum question I was sure I had a goto wine. My answer however, is also influenced by my job because I constantly sample new wines, and I never have an opportunity to settle on one. So my answer would have to be that I am continuously in pursuit of new wines.

Let me throw another question out, what is your "go to" Israeli wine when you're splurging, trying to impress, money-is-no-object, etc.

My 'goto' or house wine as we call it it the Barkan Clasis series, usually the cabernet but also the sauvignon. Outstanding at its price point.

go to wine is a difficult choice for me as I'm trying to write about Israeli wines, I am trying to explore new wines all the time and as each new vintage arrives can barely keep up with last years releases before the new one's arrives
yet there are trends and wineries I like to follow
such as what wines are putting out as their flagship wines typically Bordeaux blends for reds and Chardonnays for whites (typically) Yatir for instance has no Chardonnay
and I'm beginning to enjoy tracking Cabernet Francs, Carignans and Viogniers as I think they have great potential artisttically and commerciallly for Israeli wine.
but as that I'm not a critic per se but more of a journalist writing about trends and developments anything new or seems to be pointing towards a trend sparks my interest but if given my choice and money wouldn't an object my current selections would be (in no particular order):
Yatir Forest, almost any wine from Margalit, Castel or Lewinsohn wines, Tishbi's 2004 Sde Boker Reserve, many wines from Vitkin and Recanati... OK this list could get long because much of it depends for me what's on hand and as a writer I do strive for the new over the reliable.
The Carmel Appelation series is actually a good series for the price for someone who wants a glimpse at varietal flavor profiles.
I've got to admit though at recent tasting there wasn't any Barkan wines that really grabbed me though at a Wine Festival isn't the best setting to get a good undistracted observation

Barkan Classics seem to be a mixed bag to me. Sometimes a vintage will come out and it will really surprise you with how good it is, I'm thinking of Barkan Petite Sirah and Barkan Pinot Noir 2007, but then maybe go to a different varietal or different vintage and it will be a different story. But overall I'd agree, good go to everyday wines, especially considering price point.

My go to white is Yarden chardonnay. I'm sure sure about red.

Hi Dan,
My all time "most-cellared" wine as my "Goto" wine is the Tabor Adama Bazelet CS, 2005. In fact, I was lucky to find and purchase 3 more bottles of it today. I think around 9,000 bottles or so of this was the yield of the Mount Tavor Bazelet CS vineyards for that vintage, and it has been a fairly rare find for the last few years. I have contributed bottles from my stash to many of my closest friends' simcha's. I probably have consumed around 20 bottles, possibly several more than this because this is just an estimate from determining what I drank before I joined CellarTracker. I hope to be drinking another 20+ bottles that I have remaining in my cellar.
I possibly have consumed just as many bottles (I have a fairly accurate CellarTracker record of this wine, and it's supposed to be 21) as the aforementioned wine and it is the Tabor Adama Charsit Rosé, 2007 (500 mL). I simply love the form factor of this wine, and it was especially great for all of last summer. The 2008 vintage of Tabor is Heter Mechira. . .
Wines at an exceptional QPR that I have regularly taken to simchas and various parties, and also as Shabbos "fillers" (i.e. I can't afford money-wise and using-my-long-term-cellared-wines-wise to contribute the "best" wines [cf. Tosefos, etc. on the B'racha HaTov uMeitiv]) are: Galil Mountain CS, 2006; Galil Mountain Merlot, 2006; Galil Mountain Shiraz-CS, 2005; Segal Special Reserve/Single Merom CS, 2004; Barkan Reserve CS, 2004; Tzuba CS, 2006, etc.).

I've never met such a devoted Tabor wine drinker. I think in the states it hasn't been marketed enough and people just ignore it. Its also possible that because it is more expensive in the states it gets priced out of its category.

I cannot say that I have a "goto" wine because too much depends on mood, food and the company I am keeping at the moment. I suppose though that if there is always one Israeli wine at hand that I will go to at almost any time with appropriate lust it is the Blanc de Blanc sparkling wine in the Yarden series of the Golan Heightds Winery.
